Tomato Bredie

Ingredients

4 tablespoon Oil (medium to light vegetable oil)

2 ½ pounds lamb knuckles

1 ½ pounds lamb knuckles

2 tablespoons all-purpose flour

1 large onion

2 fresh tomatoes

2 tablespoons tomato paste

2 cloves garlic

½ teaspoon freshly ground black pepper

½ cup white wine

2 teaspoons coarse sea salt

2 cinnamon sticks

1 /2 tablespoon of dry chili pepper

2 bay leaves

1 teaspoon brown sugar

2 potatoes

Seasoning (Jumbo Chicken Stock Powder)

Before cooking

Chop the onion and cut the lamb knuckles, boneless lamb shoulder into one half-inch cubes. Wash, peel, and chop the tomatoes. Peel and cut the potatoes, quarterly and place in a bowl of cold water. Crush the garlic in a small plate and place aside.

Cooking Steps

Pour the oil in a cast-iron stew pot and place over medium heat on the gas cooker. Add the chopped onions, bay leaves, cinnamon sticks, and sauté. Stir constantly for about ten minutes or until it turns golden. Remove and place the pot aside.

Now, dust the meat with flour and divide into two batches, add one tablespoon of oil to the pot over a medium heat. Add the first batch of meat, leave for about four to five minutes until all sides are brown. Remove the brown meat from the pot and set aside. Add another one-tablespoon oil to the second batch and leave for four to five minutes until all sides are brown.

Remove excess grease from the pot, using spoon and add the white wine to the pot, reduce the heat and deglaze using a wooden spoon. Pour the meat, onions, bay leaves, and cinnamon stick to the pot. Add the chopped tomato, crushed garlic, pepper, tomato paste, and salt to taste.

Cover the pot and simmer for about forty minutes over a medium heat, stir from time to time. Add potatoes and sugar and cook until tender.

Remove the lid from the pot and stir, leave for about ten minutes.

Garnish with cilantro and serve Tomato Bredie with rice to make the perfect African food. Enjoy your Tomato Bredie.
