Moi Moi is a simple African food that can be eaten alone or adds to other meals. Moi Moi is perfect garnishing for an African food such as Jollof Rice, Fried Rice, Akamu (Pap), Custard, Garri and so on. Moi Moi can be eaten alone or with chilled soft drinks. Moi Moi is delicious and its aroma always take over the house when it is been prepared.


People shy away from preparing Moi Moi because of the stress and time spent in the process of soaking the beans, washing, removing the coat and grinding or blending the beans. The Afro Caribbean Hub has an easy and faster means to prepare Moi Moi without taking much of your time.


3 Cups of Beans-Peeled Beans

15cl Vegetable Oil

2 Seasoning (Jumbo Chicken Stock Powder)

3 Tablespoons Ground Crayfish

1 Habanero Pepper

1 Teaspoon Ground Nutmeg (If Necessary)

800g Watery Tomato Puree (3 Tatashe Peppers)

2 Medium Onions

Warm water

Salt (to taste)

Corned beef: separate into small chunks and add to the Moi Moi when mixing.

Hard-boiled eggs: Cut the eggs into small pieces.

Boiled fish: remove the bones and cut the fish into small pieces.

Before cooking

It is advisable to use one of these. If you want to go for eggs, boil the eggs or fish and cut into small pieces (cook the fish with salt and seasoning), if it is corned beef you prefer, open the can and separate the beef into small lumps.

Prepare the Moi Moi containers and arrange aside. Wash the habanero pepper and tatashe pepper if that’s what you are using. Ensure to remove the tatashe seeds (as they have a tendency to give meals a bitter taste).

Cut the onions into pieces. Blend the peeled beans, tatashe or tomato puree, onions, habanero pepper, crayfish, and ground nutmeg all together and pour the mix in a bowl.

Cooking Steps

Pour the grounded/blended peeled beans in a big bowl. Add little warm water, vegetable oil and fish stock. Slowly add warm water and stir the mixture at the same time until you get good texture with good mix of all the ingredients.

Add salt, seasoning to taste and stir again.

Pad the base of a big cooking pot, pour some water, and place on the gas cooker.

Dish the Moi Moi mixture into the Moi Moi containers you have chosen, add the egg /fish/corned beef to each container, cover and set them in the pot. The water in the cooking pot shouldn’t be above any of the containers. Add a small quantity of water as possible at a time while cooking the Moi Moi, until the Moi Moi is done.

The time limit depends on the quantity of Moi and the container you are using. To confirm that the Moi Moi is done, use your knife by putting a knife through the Moi Moi, if the knife is stained with Moi Moi paste, then the Moi Moi is not done, but if the knife just has a slight smear of Moi Moi then it’s done. Serve with a chilled juice. Moi Moi is an African food that can be stored in the freezer after being prepared and it does not loss taste.
