Kachumbari an African food that goes along with main meals or snack and Kachumbari is easy to prepare with fresh ingredients. Many people don’t know that they can still snack away on African foods, Kachumbari will change your mind.

Ingredients

3-5 Tomatoes

1 big red onion

Juice of 1 lime

Handful Fresh coriander leaves

Half cucumber

1 chili (red or green)

1 ripe avocado (optional) and firm

Pepper (to taste)

Salt (to taste)

Before Cooking

Cut and chop the tomatoes, cut the chili in half lengthwise and scoop out the seeds with the membrane (you can use plastic gloves if you very have sensitive skin), and set in a plate, then place aside.

Cut the avocado in half lengthwise, and gently twist the two halves in opposite direction, remove the pit and place the halves face down, then peel and chop very finely, place in a plate or tray.

Cooking Steps

Peel and slice the onion into thin rings and put the sliced rings in a small bowl, add a tiny salt and fill the sliced onions with water, stir and allow soaking for about 30 minutes. Now pour the sliced onions and water in a sieve, then, shake the sieve well to let out every drop of water in the sieve. Leave and allow the sliced onions to drain for about 5-10 minutes. Pour the sliced and drained onions in a large bowl.

Now add the chopped tomatoes, chili, cucumber, avocado, and coriander leaves in the bowl that contains the sliced and drained onions, stir together gently, and mix the lime juice; toss the mixture.

Serve this African food snack with any main meals or snacks you desire. Kachumbari tomato and onion salad is set to eat and serve immediately.
